Quentin Lechat, Pastry Chef of Le Royal Monceau – Raffles Paris unveils his creation of the month: The Lou Pisadou.
It was during a lunch with friends in Ardèche that Quentin Lechat fell under the spell of this traditional regional dessert. Last summer, a friend of the Pastry Chef had brought this local speciality at the end of the meal, which Quentin immediately liked, especially when accompanied by a good coffee.
To honour the autumn season that is just beginning, the Pastry Chef of Le Royal Monceau – Raffles Paris has decided to reinvent it with freshly picked chestnuts.
A speciality of Ardèche and Drôme regions, Lou Pisadou is an ultra-gourmet cake. To the traditional entremet composed of a crunchy shortbread pastry, a chestnut cream and an almond dacquoise, the daring Quentin Lechat adds a thin layer of Greek yoghurt for a fresh and sweet taste as well as thin slices of dried chestnuts for an even more intense flavour.
